# Directions:
01 - In a mixing bowl, cream together unsalted butter, light brown sugar, and granulated sugar until pale and fluffy. Incorporate maple syrup, egg, and vanilla extract by beating until well blended.
02 - In a separate bowl, whisk all-purpose flour, baking soda, and salt thoroughly. Gradually fold the dry mix into the wet ingredients, mixing just until combined. Stir in chopped pecans and mini chocolate chips, if desired.
03 - Using a tablespoon or small scoop, portion out the dough and form into balls. Arrange evenly on a parchment-lined tray and freeze for at least 30 minutes, until firm to the touch.
04 - For the batter, blend together all-purpose flour, granulated sugar, baking powder, and salt in a bowl. In a separate bowl, whisk whole milk, egg, and vanilla extract, then combine the wet and dry mixtures, stirring until smooth and lump-free.
05 - Heat vegetable oil in a deep saucepan or electric fryer to 340°F (170°C), suitable for deep frying.
06 - Dip each frozen dough ball into the fritter batter, ensuring an even coating. Carefully lower 3–4 coated balls into the hot oil at a time, frying for 2–3 minutes and turning to achieve uniform golden brown color.
07 - Remove fritters with a slotted spoon and place on paper towels to drain excess oil. Before serving, drizzle with maple syrup and dust generously with powdered sugar.
